The topping consists of fresh Italian themed ingredients, including cherry tomato and Buffalo mini mozzarella balls, cured Prosciutto and olives.
Ingredient Notes
- Crackers — Saltines, Ritz or any other brand. They can be rectangular or disk shaped. Disk shaped ones are better for your guests, to devour them in one bite, and rectangular crackers are easier to top. We used rectangular paprika flavored crackers.
- Prosciutto — Thinly sliced Italian cured ham. You can substitute with Italian salami slices or thinly slices pepperoni.
- Cherry Tomato — Red or different colors such as orange and yellow tomatoes. They call these rainbow tomatoes.
- Olives — black or green pitted, without stuffing. We like the Kalamata variety.
- Mini Mozzarella Balls — Fresh, Perlini or Bocconcini.
- Salt and Black Pepper
Process Overview
Step 1
Slice prosciutto, cut tomato, olive, and mozzarella balls into half.
Step 2
Place the ingredients as a topping over each cracker.
Step 3
Season the cracker topping with salt and black pepper.
Serve them up.

Mediterranean Cracker Party Appetizer
Ingredients
- 4-6 slices Prosciutto depends on the slice size
- 12 Cherry Tomatoes
- 12 Olives
- 6 Mini Buffalo Mozzarella Balls
- 12 Cracker
- Salt
- Black Pepper
Instructions
- Slice the Prosciutto into smaller match-stick like pieces.4-6 slices Prosciutto
- Cut the tomato, olive and mini mozzarella balls into two.12 Cherry Tomatoes, 12 Olives, 6 Mini Buffalo Mozzarella Balls
- Arrange and spread out the prosciutto pieces, tomato, olive, and mozzarella on each cracker. Keep on each cracker equal quantity, that means 1 tomato, 1 olive and ½ mozzarella ball cut into half for each cracker.12 Cracker

- Serve up at room temperature as soon as possible so that the crackers don't get soggy.

Serving & Storing
After assembling the crackers, place them on a party serving tray and serve them up at room temperature straightaway.
Do not keep them too long sitting around, or else they will get soggy and unappetizing.
The crackers should be crunchy and not soaked with the juices of the topping. Therefore, there is no point in prepping them in advance.
The only thing that you can prep in advance if required is the preparation of the topping.
You can pre-cut the prosciutto, olive, tomato, and mozzarella balls and keep the topping in an airtight container refrigerated.
When you are ready to serve up your little party bites, just lay out the crackers and top them with the ready cut ingredients, season, and they are good to go.
