This is what these Italian themed charcuterie skewer bites are all about.
When I came up with these, I kept simplicity and flavor in mind. The idea is to prepare amuse bouche appetizers effortlessly. In fact, I think they are fun to put together!
What Mini Skewers to use?
You will need party appetizer skewers or toothpicks to make these.
They are sometimes called picks or party skewers, but if you search under party toothpicks, they will show up as well in online stores.
Use metal party picks that can be used again and again. They are strong and look more classy.
I had ordered a set of a dozen metal picks over Amazon, but they didn't arrive on time, so I used bamboo party skewers when I snapped these pictures.
Bamboo or wooden appetizer skewers can look great too and may come handy if you prefer to dispose of the sticks after using them for a larger gathering.
Ingredients
These are Italian themed because I opted for a selection of Italian ingredients for these party appetizer skewers.
I tried to simplify the process by using only 4 ingredients so that it's easier for you to source them.
- Cherry Tomatoes — I like to use small cherry or grape tomatoes that come in different colors. These are usually a mix of small tomato varieties that are sold as a batch.
- Slices of Italian Salami Types and/or Prosciutto Slices — I used both in my pictures.
- Small Fresh Buffalo Mozzarella Balls — These are also known as Ciliegine Mozzarella balls in Italy, and they are about the size of a marble or cherry (hence the Italian name, which stands for cherry).
- Olives — Should be pitted so that you can skew them. Pick your favorite variety and either green or black, or both.
How to make it?
Step 1
Keep all ingredients ready. Rinse tomatoes and pat dry.
Step 2
Pierce through a tomato and mozzarella ball.
If you are using Prosciutto, slice it into two. Fold prosciutto or Italian salami into a parcel.
Step 3
Pierce meat parcel through the picks and end with an olive.

Italian Party Charcuterie Skewer Bites
Ingredients
- 12 Cherry Tomatoes I like to use different colors
- 12 Mini Mozzarella Balls aka pearl or ciliegine mozzarella
- 6-12 slices Italian Salami or Prosciutto mix it up with different types
- 12 Olives
Instructions
- Keep all the ingredients ready. Rinse tomatoes and pat dry. If your prosciutto is large, cut it into two.
- Take a pick into your hand and pierce through a tomato or a mini mozzarella ball first, and continue with the one you haven't pierced yet.12 Cherry Tomatoes, 12 Mini Mozzarella Balls
- Fold your prosciutto or Italian salami into a parcel-like shape and add that to your party skewer.6-12 slices Italian Salami or Prosciutto
- End with an olive and carefully turn the ingredients if needed so that the prettier side is the visible side.12 Olives
- Serve up at room temperature to your party guests.

Serving and Storing
I highly recommend preparing these charcuterie party skewers last-minute fresh, as they won't keep that well in the fridge for too long.
They only take 5 minutes to put together, and therefore they are a perfect addition to any family or friend gathering. If they get over (because they are so tasty), simply prepare more.
If you really need to prep them in advance, make them the same day that you intend to serve them. Place them onto a flat plate next to each other so that they don't get damaged with a cling film around them, and keep refrigerated.
Don't keep them out in the heat for too long because the mozzarella is fresh and a sensible ingredient.
I like serving these Italian party bite skewers on a dark stone slate so that the color of the ingredients pop all the more. That way they appear fresh and people will fall over them within minutes.
