This is a quick tutorial to help you make salami roses at home from scratch. These look great on a charcuterie boards and serve as an edible decoration.

🌹 What's a Salami Rose?
A salami rose consists of layers of thinly sliced salami, which are placed, overlapping, and formed in such a way that the salami slices look like a rose.
I saw them first at my sister's gathering. Sarah is a great host, and she loves to organize small home parties. She makes these salami rose flowers when she is entertaining guests.
Basically, the salami rose is plated and arranged with various meat and cheese cuts on a charcuterie board. We use German and Italian cold cuts.
This is, together with the salami rose, of course, all placed in such a way so that it is aesthetically pleasing.
🥂 What you will need to make it
Salami — Should be thinly sliced and whole, so no half cut slices. It doesn't really matter whether you are using Italian or Hungarian salami, what matters is rather the size. The diameter of your salami roses should be between 2 and 3 inches (5 to 8 centimeter) so that you can form the rose.
Salami Types that you can use:
- Genoa Salami
- Spicy Beef Salami
- Varzi Salami
- Napoli Salami
- Calabrese Salami
- Hungarian Salami (very common in European and Asian deli stores)
- If you are in Austria or Germany, get a Haus Salami or green pepper salami from the deli grocery store counter.
Glass — The technique requires a glass. The idea is to fold the slices over the rim of a glass to shape the rose. For that reason, you will require a wine glass or a tumbler glass with a diameter XXXX
🔪 How to make a Salami Rose with a Glass?
Here is a quick overview to help you get going. You will find the how-to video in the recipe card below.
Step 1
Place a slice of salami halfway over the rim.
Place a second slice right next to the first one, so that the second slice covers half of the first slice
Step 2
Continue placing slices of salami next to each other that way. Each salami slice has to always cover the previous salami slice.
Finish one circle and then continue with the second row, placing the salami slices overlapping the first row.
Step 3
Complete the 2nd row and then carefully turn your glass upside down. Place the salami rose on a surface to reveal the rose shape.
You can leave the rose as is, or you can pick around the “petals” a bit to make it appear more like a rose.

How to make a Salami Rose

Instructions
- Grab a clean glass, such as a wine glass or a flute, and place your first salami slice half-way over the rim.12 slices Salami
- Take another slice of salami and place it right next to the first slice.
- Continue to place your third, fourth and rest of salami slices next to the previous one. You will complete about 2 circles, overlapping the previous row with the last row.
- When done, placing the salami slices over the rim, carefully turn the glass upside down so that the salami rose shape comes to light on the working surface.
- At this point, your salami rose is ready and can be placed on a serving platter with other cured meats and cheese. You can arrange the slices a bit too so that it appears more like a rose.
Notes
- Use a glass which is about 2 inches (ca. 5 cm) in diameter at most. In the video, we had a beer glass with a stem, but a white wine glass will do the job too or a champagne flute. I don't recommend using larger diameter glasses because the overlapped salami slices won't hold to form a rose.
- Get thinly sliced salami which is flexible enough to be placed around the glass rim. But make sure the salami doesn't fall apart that easily.
- Depending on the salami type, size, and the glass diameter, you will need about 12 to 16 slices. We used 13 slices in the video.
- I recommend getting Italian or Hungarian salami. Avoid French style salami because they tend to be smaller in diameter.
- Get salami slices that are about 2 to 3 inches (ca. 5 to 8 cm) in diameter. If the salami slices are bigger than the recommended diameter, you will have a harder time overlapping them over each other to create a rose, too small and the rose will fall apart.
- You can prep the rose in advance but keep it in the fridge until serving time because you don't want the salami sitting out for far too long.

🍴 Serving Ideas
You can prep your salami rose in advance and store in the refrigerator in a container so that it won't get damaged until serving time.
Don't leave the salami rose for too many hours out, think of food safety.
I recommend serving your salami roses and cold cuts with a small appetizer/fruit fork so that your guests can serve themselves without touching the displayed food with their hands.
Arrange the rose at the center of a slate serving plate and place your cold cut slices and appetizer or snack food around it.
Delicious things to serve along:
- cold cuts — prosciutto, black forest ham, mortadella, pastrami, beretta, soppressata, bologna, Spanish chorizo.
- cheese — flavorful cheese such as brie, morbier, Saint-Nectaire (my favorite) and some goat cheese such as marinated goat cheese or a goat cheese roll coated in pepper.
- pickle — pickled gherkin/cornichon, small onions, beets, carrots, and olives.
- butter or margarine. Compound butter enriched with herbs is my tip.
- bread spread — such as Liptauer or spiced cream cheese.
- artisanal bread — some special whole wheat bread slices or homemade baguette slices are also a hit.
💭 FAQs
Use your leftover salami roses in other dishes. For example, I make a creamy gnocchi sauce where I switch the bacon or ham with cut salami. You can also just use the salami leftovers in your sandwich.
Yes, as long as the salami is thinly sliced and not all too small or large. But keep in mind that your salami rose shape will turn out differently from the pictures. It will be slightly less symmetrical compared to the round salami slices.
