Little bite sized dough nibbles stuffed with fresh mini mozzarella balls.
These are quick party appetizers to entertain your guests, or prepare them all for yourself as a TV or game day snack.
TL;DR
I had a roll of dough that needed to be used up and plenty of mini mozzarella balls, and this is how these little bites came to be.
You can use store-bought crescent or pie crust rolls to prepare these mozzarella bites with ease.
Once you shape your balls, they are topped with sesame seeds for additional flavor and aesthetics.

Ingredient Notes
- Crescent or Pie Crust Roll — Any of the two can be used. A crescent crust is sold in a rectangular shape, while a pie dough comes in a round shape. I used a pie dough in the pictures because that's what I had. Something to keep in mind, it's easier to cut out squares from a rectangular dough than a round one. I show how to do it with a round pie dough in the instructions below.
- Mini Mozzarella Balls — These are bite sized fresh buffalo mozzarella balls. You can use a large regular sized mozzarella ball, but you will have to cut it into bite sized pieces so that you can easily wrap the dough around the cheese to form a ball.
- Salt and Black Pepper
- Oregano, dried
- Olive Oil — To brush the balls before baking.
- Sesame Seeds — black or white or both. These are sprinkled over the oil brushed balls before baking.
Process Overview
Step 1
Unroll your crescent or pie dough crust. Cut into about 3×3 inch or 8×8 centimeter rectangular. Separate them from each other.
Step 2
Place a mozzarella ball on each rectangular.
Sprinkle over each cheese ball, salt, pepper, and oregano.
Step 3
Wrap the dough around each ball and seal them. Turn the sealed part into the bottom.
Step 4
Poke at the top into each dough ball with a toothpick (to help release steam while baking). Brush oil over each ball and sprinkle with sesame seeds.
Step 5
Bake the mozzarella bites until golden. Let them cool a bit before serving them warm or at room temperature.

Baked Mozzarella Dough Bites Recipe
Ingredients
- 1 Crescent or Pie Crust Roll I used a Pie Dough in the pictures
- 20-25 pieces Mini Mozzarella Balls aka Mozzarella Pearls
- Salt small pinch over each ball
- Black Pepper Ground small pinch over each ball
- ½ Tablespoon Oregano Dried spread over each ball
- 1 Tablespoon Olive Oil
- ½ Tablespoon Sesame Seeds white or black or both
Instructions
- Preheat oven to 350 Fahrenheit (180 °C).
- Roll out your crescent or pie dough on a parchment lined baking sheet.1 Crescent or Pie Crust Roll
- Cut into same-sized rectangular. Each rectangular should be about 3×3 inches (8×8 cm) big. That should make about 20 to 25 rectangular.
- Separate each pie or crescent dough rectangular from each other and place them next to each other with a small distance from each other.
- Place on each rectangular a strained mini mozzarella ball in the center.20-25 pieces Mini Mozzarella Balls
- Season each ball by sprinkling some salt, black pepper and oregano over them.Salt, Black Pepper Ground, ½ Tablespoon Oregano Dried
- Wrap the dough over the ball and seal the dough ending by twisting it a bit around. The balls should be well sealed so that cheese doesn't leak out. If cheese leaks out, it's ok too, it's not a big deal. Keep the sealed side at the bottom.
- Poke with a toothpick into each dough ball at the top so that the steam can release while they are baking.
- Spread some olive oil over each ball of dough and sprinkle the sesame seeds over the oil.1 Tablespoon Olive Oil, ½ Tablespoon Sesame Seeds
- Bake your mozzarella dough bites at 350 Fahrenheit (180 °C) for about 20 to 25 minutes, or until golden and baked.
- Leave them out to cool a bit and serve them warm or at room temperature with a dipping sauce.

Turn these cheesy balls into a party appetizer (amuse bouche) or a party snack (i.e., game day).
I truly like serving these cheese baked dough balls with a dipping sauce. I place some dipping sauce into a small bowl or ramekin and people just dip in.
My favorite dipping sauces include common options such as ketchup or a homemade mayonnaise.
Try special mixed dipping sauces such as the Curry Ketchup, Curry Mayonnaise, Mayocue or the infamous Mayochup (which we call cocktail sauce in Europe).
Storing
If you have leftovers, keep them in an airtight container in your fridge for up to 5 days. Warm them gradually up in the oven or in the microwave.
You prepare these in advance, too. Simple follow all the instructions, except the oil and sesame seeds, and place the shaped mozzarella stuffed balls into the freezer to freeze hard.
They can be left in the freezer for up to 2 months at most. To thaw, keep them in the fridge overnight to thaw gradually OR place them frozen on a parchment lined baking sheet and bake them without an oil sesame topping without preheating the oven. Just keep extra baking time, as they have to thaw and bake all in one go.
