TL;DR
Technically, Paul didn't invent this recipe.
Tuna cracker appetizers are part of his Asian heritage. They prepare these easy party bites during the holidays in his hometown in Goa, India.
In time, I realized that this recipe is rather popular in Asia, and it was always a popular snack when we made it for our friends back in Europe!
You will love this snack, if you are looking for a quick last minute amuse bouche party bite!
A set of fresh ingredients are chopped fine and combined with canned tuna and mayonnaise. The crackers are then topped with the tuna salad mix just before serving time.
Ingredient Notes
- Onion — I recommend purple or red onions, but white or yellow onions are ok too. If you don't want the onion to overpower your tuna cracker bites, use shallots, green onions or shallots. Onions are diced.
- Tomato — Fresh, diced.
- Chives — Fresh, chopped.
- Canned Tuna — I prefer the taste of tuna chunks in olive or vegetable oil instead of brine. You are free to use tuna in brine too. Just make sure to always drain the tuna well before preparing the tuna salad mix.
- Mayonnaise — Tube mayonnaise or homemade mayo, the choice is all yours. I like this recipe with Japanese mayonnaise! If you are feeling adventurous, try this recipe with a spicy sriracha mayonnaise mix or a curried mayonnaise.
- Salt & Black Pepper — a simple seasoning.
- Cracker — Ritz or another cracker brand that makes disk-shaped crackers (or saltines) which you can put into your mouth in one bite. Do not use larger crackers, or they will turn into two-bite appetizers, which can be messy for your guests.

Serving
After topping each Ritz cracker with the tuna mixture, place the appetizers on a large serving tray.
They are one-bite party appetizer hors d’oeuvre that are great with champagne or drinks thereof, such as the Kir Royale.
We love them all year round. They are budget-friendly bites to feed a large crowd at a social gathering, or make them for your friends and family members this holiday season.
The tuna is refreshing and it keeps well. Therefore, you can serve your tuna cracker appetizers during the summer months at a cocktail pool party too.
Storing & Prepping in Advance
Make the tuna salad topping in advance so that you get to spend more time entertaining your guests.
The idea is to prepare the tuna mass hours before the actual event. Keep it refrigerated in a closed container.
Then, when you are ready to serve up the bites, prep the tuna topping over your laid out Ritz cracker disks and serve them directly to your guests.
Do not prep the crackers with the tuna in advance because the crackers will get soggy. This is important.
Keep in mind, the crackers should be crunchy and not soggy, the tuna mix should not be too soggy.
