    TL;DR

    If you ever get to travel across Italy, you will come across sandwiches known as tramezzini (plural tramezzini, singular tramezzino).

    These are prepared with crustless soft white Italian bread slices, and they come with all types of fillings.

    Served cold or at room temperature, they make for the perfect work or school lunchtime meal.

    This particular version is Paul's creation. My husband loved trying out different Italian sandwiches on our latest trips to the regions of Tuscany and Friuli Venezia Giulia.

    He came up with this flavor-packed and filling, egg salad, tomato, onion, cheese, and bologna-filled Tramezzini sandwich variation.

    Ingredient Notes

    • Boiled Eggs
    • Mayonnaise — We use Japanese Mayonnaise, because we like that better. You can use a classic homemade mayonnaise or jar mayonnaise.
    • Salt & Black Pepper
    • Crustless White Bread — Soft Italian white bread slices without a crust, also known as tramezzino bread.
    • Onion — White or purple onion, thinly sliced.
    • Tomato, thinly sliced.
    • Cheese Slices — Pick your favorite cheese. We used a cheese commonly available in central Europe and we do prefer strong-flavored cheese.
    • Bologna — Bologna cold cuts of your choice. In Italy, they use Mortadella, we used a paprika-flavored bologna variation in the pictures. Bologna is cut into very thin slices in Europe, so we can layer them in the sandwiches. You might have to reduce the quantity if your bologna is cut thick.

    Tip: If you are looking for new flavors, try a curry mayonnaise, a sriracha mayonnaise, a mayochup or a mayocue sauce.

    Process Overview

    Step 1

    Prepare the egg salad. Smash your boiled eggs with a fork, and mix in mayonnaise, salt, and black pepper.

    Step 2

    Keep the thinly sliced tomatoes and onions ready.

    Spread the egg salad over a slice of bread. Top with onion slices and tomato slices.

    Step 3

    Top with cheese slices and bologna slices.

    Close the sandwich with a slice of bread and cut the sandwich into two.

    Ingredients

    • 2 Boiled Eggs
    • 3 Tablespoon Mayonnaise
    • ¼ Teaspoon Salt or to taste
    • ⅛ Teaspoon Black Pepper Ground or to taste
    • 4 Crustless White Bread Slices *See Notes
    • 1 Medium Onion thinly sliced
    • 1 Medium Tomato thinly sliced
    • 2-4 Cheese Slices quantity depends on size
    • 4-10 Bologna Slices quantity depends on thickness

    Instructions

    • Smash boiled eggs in a bowl. Add the mayonnaise, salt, and ground pepper to that. Mix it all well.
      2 Boiled Eggs, 3 Tablespoon Mayonnaise, ¼ Teaspoon Salt, ⅛ Teaspoon Black Pepper Ground
    • Evenly spread the egg salad over one bread slice.
      4 Crustless White Bread Slices
    • Top with onion and tomato slices.
      1 Medium Onion, 1 Medium Tomato
    • Arrange the cheese and bologna slices over that and close the sandwich.
      2-4 Cheese Slices, 4-10 Bologna Slices
    • Slice the tramezzino sandwich into two to form two triangles.

    Notes

    Crustless Italian soft white bread slices that are sometimes sold as sliced tramezzino bread.

    Serving & Storing

    Soft tramezzini in Italy are served cooled or at room temperature.

    You can prep a bunch in advance to store them in airtight containers in your refrigerator. The containers need to be airtight, or else the bread will get dry in the fridge.

    These can be kept for up to 2 days cooled, but they naturally always taste better fresh.
