Mediterranean spices and herbs are combined into a seasoning blend to enhance your chicken.
TL;DR
I came up with this chicken seasoning when I visited my family in France.
We cook with Mediterranean flavors in the summer months and the combination of these spices and herbs, make for a great chicken seasoning blend.
The blend of spices and herbs can be used to season all chicken meals, or use it as a rub and add salt to it.
Ingredients
Make sure to use the highest quality of spices if you want real flavors.
If your budget is tight, get Great Value type of spices because they have a decent quality.
- Garlic Powder — I use regular garlic powder, but you can use smoked garlic powder too.
- Black Pepper — freshly crushed is the best. I LOVE fruity Tellycherry Black Peppercorn. It's a black pepper variety.
- Rosemary, ground
- Paprika (or Cayenne) — I use 50:50 ground smoked paprika and sweet paprika for the best result. You are free to experiment with sweet paprika, smoked paprika, hot paprika or cayenne pepper.
- Cumin, ground
- Marjoram — Dried. You can switch marjoram with oregano if you can't get it. Although, marjoram is more suitable for this recipe.
How to make it?
Step 1
Measure your ground spices and herbs.
Place them in a small mixing bowl or small spice jar.
(Keeping it all in a jar first is better because you will need to store it anyway)
Step 2
For the mixing bowl: Combine the spices with a spoon.
For the spice jar: Close the jar with a lid and shake well.
Step 3
Use the spice blend in your food as needed, and store the rest in a jar.

Mediterranean Chicken Seasoning Recipe
Ingredients
- 1 Tablespoon Garlic Powder
- ½ Teaspoon Black Pepper Ground
- 1 Teaspoon Rosemary Dried
- 2 Tablespoon Paprika Powder or Cayenne, *see Notes
- 1 Teaspoon Cumin Seeds Ground
- 1½ Teaspoon Marjoram Dried alternative is oregano
Instructions
- Keep ground spices and dried herbs ready.1 Tablespoon Garlic Powder, ½ Teaspoon Black Pepper Ground, 1 Teaspoon Rosemary Dried, 2 Tablespoon Paprika Powder, 1 Teaspoon Cumin Seeds Ground, 1½ Teaspoon Marjoram Dried
- Take the dried herbs and spices, measure them, and then transfer them into a small mixing bowl or a spice jar.
- If you add them into a spice jar, close with a lid and shake to combine the ranch seasoning. For the mixing bowl, just stir them together.
- Use your ranch seasoning in your cooking or save it for later.

Uses
You can use this seasoning to add flavor to your chicken meals.
I just randomly use a teaspoon or two of this chicken spice blend in chicken dishes to enhance the flavor.
A good example is the Chicken Geschnetzeltes. I add one teaspoon of the chicken seasoning instead of the paprika, salt, and pepper in the recipe to pep up the dish.
I also sometimes switch out the Italian seasoning blend with the chicken spice blend in my Chicken Alfredo or stir in a teaspoon of it into my Dijon mustard chicken.
Alternatively, this chicken seasoning blend can be used as a rub with the addition of salt.
Add 1 Teaspoon of salt to the base recipe of the Mediterranean flavored chicken spice blend to use it as a chicken rub. The rub is great with oven roasted chicken thighs!
Storing
Your homemade Mediterranean chicken seasoning is good for a few months in a jar if you store it properly.
Keep the spice blend away from direct sunlight and humidity (especially humidity!).
If you live in a cold or hot and dry environment (EU, northern America, Dubai) you can keep the seasoning on a pantry shelf.
If you live in a tropical or wet and humid environment (UK, Florida, Caribbeans, South Asia, Central Africa), store the chicken seasoning in your fridge.
Mold can grow fast in wet climates, and my experience is that the fridge is your best friend.
Besides, keep in mind that spices and herbs will lose intensity over time. This is why I always advocate for smaller spice blend portions.
