    📕 What are little smokies?

    Little Smokies (or lil smokies) are smoked mini sausages that consist of a blend of beef and pork meat.

    They are like cocktail wieners or other small mini sausages but the meat has been smoked, turning the little smokies extra flavorful!

    🍴 Serving

    The smoked small sausage can be turned into a party appetizer or serve it up with a side dish for dinner.

    As a party appetizer

    I serve my bacon wrapped smokies as a party appetizer (so called amuse bouche) with a toothpick in it so that people can pick them up from the tray.

    They resemble pigs in a blanket that are wrapped into a crescent or puff pastry rolls.

    You can add a homemade cold dipping sauce.

    I like to dip my smokies in sriracha mayo and Paul loves his Lil bacon smokies with a hot and sweet Thai chili pepper sauce.

    Another cool sauce to serve your sausages is my mango habanero hot sauce for all those who like to rip their faces apart.

    I will focus on this variation in the instructions below.

    As a dinner/ breakfast dish

    You can skip the toothpick all together and serve your bacon sausages with other side dishes for dinner or even as a breakfast meal.

    Serve as a full-fledged dish with fried potatoes, baked beans, mac and cheese or even with sauerkraut (so good!!).

    🔪 How to make them?

    Bacon wrapped smokies is the easiest, fastest and most convenient appetizer to prepare.

    Your party bites will be ready within minutes and they are even low carb!

    Step 1

    Take bacon slice and cut into 3 pieces.

    Place little smokie sausage on a bacon piece and roll in.

    Secure bacon with a toothpick.

    Step 3

    Place bacon wrapped smokies on a parchment-lined tray.

    Roast in the oven till crispy and done.

    💡 Reheating

    After having baked your little smokies with bacon to perfection, they should be enjoyed still warm or at least when the bacon is still somewhat crunchy.

    I hate chewy bacon and crispy bacon is the A and O here.

    You can prepare your smokies in advance and to reheat them you can either pop them back into the oven for a few minutes so that they warm up and get crispy again or fry crispy in a pan with some oil.

    I don't recommend warming up in the microwave because the bacon doesn't turn out crispy.

    Ingredients

    • 16 slices Bacon thin cut, *see notes
    • 48 Little Smokies
    • 48 Toothpicks
    US - Metric

    Instructions

    • Preheat oven to 350° Fahrenheit/ 180° Celsius.
    • Cut bacon slices into three same-sized pieces.
    • Place on each bacon piece a little smokie sausage and roll it in.
    • Secure with a toothpick. (to serve as an appetizer or skip toothpick if you intend to serve as a dinner dish).
    • Place bacon wrapped sausages on a tray lined with parchment paper.
    • Bake until crisp and golden at 350° Fahrenheit/ 180° Celsius. Mine took about 10 minutes, your's might take longer as it depends on the quality and the fat content in your bacon.
    • Serve still warm with a cold dipping sauce.

    Notes

    My bacon slices are thin cut slices. About 6.7 inches/ 17 centimeters long and 1½ inch/ 4 centimeters broad. Yours might be larger or smaller so you will need to adjust the quantit if that is the case.
