TL;DR
Tomato bruschetta is a wonderful Italian appetizer or snack bite. These bites are made of fresh tomatoes and crunchy toasted bread slices.
Normally they are served on larger toasted bread pieces, but we always found that a bit inconvenient, as they crumble after every bite.
So, instead we prepare one-bite tomato bruschetta.
You will need small bruschettini to make these, which can be purchased at your nearest grocery store, or you can simply toast a small batch of baguette slices.
Ingredient Notes
- Tomato — The freshest and most fragrant tomatoes that you can find. Italians grow high-quality tomatoes, and this is your main ingredient to make the bruschetta topping pop.
- Olive Oil — Use quality olive oil for the best result. I like cold-pressed olive oil.
- Salt
- Black Pepper — Freshly ground for the best effect.
- Oregano — I use dried, but if you have fresh oregano, you can use that also.
- Garlic — Fresh garlic clove.
- Mini Bruschetta — These are also called Bruschettini in Italian. They are bite-sized mini bruschetta, which are perfect for entertaining.
Process Overview
Step 1
Dice tomatoes and mix in the olive oil, salt, pepper, and oregano.
Leave it marinating for 30 minutes.
Step 2
Cut the garlic in two lengthwise, take out the seedling, and discard.
Rub the garlic against each bruschetta to flavor.
Step 3
Complete each mini bruschetta with the tomato topping, and drizzle with some more olive oil.
Serve up at room temperature

Mini Tomato Bruschetta (Bruschettini)
Ingredients
- 1 Large Tomato
- Drizzle Olive Oil extra virgin
- Pinch Salt
- Pinch Black Pepper Ground
- 1 Teaspoon Oregano Dried or Fresh
- 1 Clove Garlic
- 24 Mini Bruschetta aka Bruschettini
Instructions
- Cut your clean tomato into dice and place the tomato into a mixing bowl.1 Large Tomato
- Season the tomato with olive oil, salt, black pepper, and oregano and combine well.Drizzle Olive Oil, Pinch Salt, Pinch Black Pepper Ground, 1 Teaspoon Oregano Dried
- Leave the seasoned tomato to marinate for at least 30 minutes.

These mini tomato Bruschettini are great in the summer months when the temperatures are soaring outside.
We came across these bites in Italy, and they served them up as complimentary appetizers, or you could order them as a snack.
As an appetizer, think pool party, a dinner event with aperitif, or any other fun family or friends gathering. They go well with all alcoholic drinks, no matter if it's a glass of wine, a beer, or a cocktail.
You can also just make them to enjoy as a snack anytime of the day. I think tomato bruschetta tastes great as brunch food.
Storing
These Bruschettini should be enjoyed the same day, and they don't keep that well.
I recommend prepping them just before serving. You don't have to top all your bruschetta, just top a few with the marinated tomatoes and prep the rest on demand.
The tomato marination, on the other hand, can be prepared in advance, and you can store it in your fridge for a few days at least. In fact, the longer the diced tomatoes get to marinate, the better.
