The Alla Vodka Sauce is a tomato cream-based pasta sauce. It's velvety and smooth, thanks to the vodka, which binds this fantastic tasting pasta sauce.

Ingredient Notes
- Olive Oil — Or a vegetable oil such as canola or sunflower oil.
- Onion
- Garlic — Fresh.
- Tomato Sauce — Unflavored tomato sauce.
- Oregano or Italian seasoning, dried
- Cayenne Pepper or Paprika
- Black pepper and Salt — to taste
- Vodka — This is a main ingredient. Vodka helps to bind (emulsify) your sauce, making it silken. I use a popular vodka brand for this.
- Table Cream or Heavy Cream or Half-and-Half
Parmesan is used as a topping. Sprinkle some over your pasta and sauce.
Process Overview
Step 1
Sauté onion and garlic soft in olive oil and pour in your tomato sauce.
Step 2
Stir in the seasonings and vodka, and mix well.
Simmer to infuse.
Step 3
Complete the sauce with cream or half-and-half and combine it well
Toss your cooked pasta in the sauce.

Ingredients
For the Sauce
- 2 Tablespoon Olive Oil
- 1 Onion sliced
- 2 Pieces Garlic Cloves chopped
- 1.5 Cup Tomato Sauce unflavored
- 1 Tablespoon Italian Seasoning or Oregano
- 1-2 Teaspoon Cayenne Pepper Ground or Paprika
- Black Pepper Ground pinch
- Salt pinch
- ¼ Cup Vodka
- ¼ Cup Table Cream *see Notes
Instructions
- Heat up a pan with the olive oil and add the sliced onion and chopped garlic. Cook soft on medium heat.2 Tablespoon Olive Oil, 1 Onion, 2 Pieces Garlic Cloves
- Pour in the plain tomato sauce and combine.1.5 Cup Tomato Sauce
- Season with Italian seasoning or oregano, with cayenne pepper or paprika and combine.1 Tablespoon Italian Seasoning, 1-2 Teaspoon Cayenne Pepper Ground
- Simmer your sauce for 5 minutes, so that the flavors can develop.
- Season further with black pepper and salt. Also pour in the vodka and mix it all over medium to slow heat.Black Pepper Ground, Salt, ¼ Cup Vodka
- Pour in liquid cream and combine too.¼ Cup Table Cream
- Let the sauce simmer over a slower flame for a bit. Take from the heat when it starts to boil, or else the vodka will evaporate.
- Use over your pasta and enjoy.

Serving
Serve the sauce over your favorite cooked pasta variety, or toss the pasta in the sauce. I like rigatoni and penne, as seen in my penne alla vodka.
Storing
Prepare the sauce in advance and freeze it. That way you have a pasta sauce ready after a long day at work or when you feel lazy in the kitchen.
The frozen sauce can be thawed overnight in your fridge or defrost and reheat in your microwave or oven gradually. Then you just use it as per my serving instructions.
