For a very long time I didn't have a clue that there were that many ways to add lentils to my daily diet!
I, personally, enjoy lentil dishes if they are tasteful and with that, I mean a lentil dish needs to be spiced or a mixture of herbs needs to be added during the cooking process.

Years ago I had no clue that I would fall in love with Indian lentil recipes the way I did when I got to taste different dishes.
Lentils are so versatile, you can turn them into soups, curries, appetizers, and even sweets!
That of course is good news for us because it gets easy to just add lentils to our daily diet if we have more lentil preparation options and recipe ideas.
So while I could see that people were magically creating wonderful lentil dishes, I was still confused about the dish names and the different Indian lentil dishes.
So yes, my favorite Indian lentil recipes need to be flavorful, exciting, and pleasing to the eye. Over the years, I extended my knowledge and in the past days I got around to collecting the best Indian lentil recipes from my fellow food blogger friends.

Lentils is something that I rarely cook with but have been wanting try out for budgeting reasons. I've been told its really well priced for the amount you can get. This page will come in very handy for trying out ways to make it since I'm unfamiliar with cooking it.

I've only ever made a European style Lentil soup from lentils! I didn't know what else to use them for, or that there were so many uses for them! I may have to give a few of these a try to mix up my meal plan.

Looks delicious. Love love love lentils. is there anyway to modulate the heat on some of the dishes so that they are not too spicy?

Brad, most Indian lentil recipes in this collection are, I believe, not that spicy so you should be fine. I personally don't eat too spicy either, so I understand your concern. Generally speaking you can always reduce the heat in any dish by omitting or reducing the amount of chili added.
