TL;DR
Hutspot is a Dutch comfort dish made of potatoes, carrots, and onions. The vegetables are mashed and served with a pork sausage or other pork main course meals.
Belgian Flemish neighbors have a version of their own called hutsepot, but regionally it tends to be more coarse.
My recipe is somewhat semi-coarse but velvety, and we love to prepare it instead of mashed potatoes.

Ingredient Notes
- Potato — A soft, fast-cooking potato variety such as russets and Yukon golds.
- Onion — White or yellow onion variety.
- Carrots — Fresh carrots. If you use organic carrots, you don't need to peel them.
- Bay Leaf — For comfort flavors. Helps to infuse the hutspot.
- Salt & Black Pepper
- Milk — For a velvety mashed vegetable finish.
- Butter — Adds flavor to the dish. I don't recommend skipping the butter, as it's a main ingredient.
- Nutmeg — An essential spice to bring out the other flavors.

Process Overview
Step 1
Prep vegetables; peel and dice them small.
Boil vegetables with bay leaf and some salt soft.



Step 2
Strain vegetables; discard bay leaf. Add milk, butter, and seasoning to the vegetables and heat.


Step 3
Mash everything chunky or soft.

Hutspot (Dutch Mashed Potatoes with Carrots and Onions) Recipe
Ingredients
To Assemble
- ½ Cup Milk
- 2 Tablespoon Butter
- ⅛ Teaspoon Nutmeg
- Salt to taste
- Pinch Black Pepper
Instructions
- Peel your potato, onion, and carrot, and dice them all.1 Pound Potatoes, 2 Medium Onions, 3 Large Carrots
- Place them into a pan with water, some salt, and a bay leaf to cook through.Water, Pinch Salt, 1 Bay Leaf
- Strain the vegetables once they are cooked through and discard the bay leaf.
- Take the cooked potatoes, carrots, and onions back to the pan. Add milk, butter, nutmeg, salt, and black pepper.½ Cup Milk, 2 Tablespoon Butter, ⅛ Teaspoon Nutmeg, Salt, Pinch Black Pepper
- Keep it on the lowest heat setting and start mashing with a potato masher or simply with a fork. Mash the vegetables to the desired consistency (they can be a bit chunky or not).
- Take it from the heat once done and serve up your mash as a side dish.

Serving
Hutspot is served with Dutch smoked sausages in the Netherlands. These are known as Rookworst. These sausages are not that commonly available outside the Netherlands, so we tend to prepare hutspot at home with whichever pork sausages we like.
I used Frankfurter sausages in the pictures; these taste almost like wieners, but they are not the same. Get whatever sausages you can buy and that you enjoy to make this a well-rounded meal.
Pure seasoned pork sausages are better suited for this flavor profile. Generally, hutspot goes well with all pork main course dishes, such as garlic roasted pork loin roast, ribs, and pork belly.
If you feel creative, try using this Dutch mashed potato in other recipes. For example, a cottage pie (beef shepherd's pie) can be greatly enhanced with this Dutch hutspot.


Storing
Leftovers can be kept in an airtight container to cool in the fridge for up to 5-6 days. Warm up in the microwave or gradually on a lower heat setting in the oven.
To freeze, store in batches in your freezer and thaw and reheat in the microwave or oven.
