Blanching Almonds means using a cooking method to loosen the skin to peel the almonds.

Two Methods to Blanch
You can blanch your almonds two ways, and both are valid methods.
- Soak the almonds overnight.
- Keep the almonds in boiling hot water for 60 seconds.
I recommend using the soaking overnight method to soften your almonds. As they soak in the water for hours, they will, ultimately, turn soft. This can be handy when you intend to make an almond marzipan paste. It's easier to work with soft almonds in this case.
I use the quick hot water blitz soaking method when I'm in a hurry.
Process Overview
Step 1
Place almonds in a bowl.
Pour water over your almonds. To soak overnight use room temperature water and to soak within 60 seconds use boiling hot water.
Step 2
Strain when the skin detaches from the almonds.
Peel all the almonds with your fingers and process them further the way you see fit.

- Decide which method you will use to blanch and peel your almonds. If you are in a hurry, use hot water, if you want to soak your almonds overnight, use room temperature water.
- Place almonds in a bowl and pour water over the almonds.1 cup Almonds, Water

- Strain almonds and remove the skin from each almond. Separate skin and almonds.
- Use your peeled almonds further in your cooking and baking.

Ideas to use your peeled Almonds
Peeled almonds can be utilized creatively in your kitchen.
Dry them further and grind them to make a white almond flour. Prepare almond butter or, as I mentioned further on top, a simple egg-free marzipan paste.
You can make a plant-based almond milk too, or crush your peeled almonds to use in cake filling or as a pastry or cake topping.
Blanched almonds come incredibly handy too with Indian nut-based curry pastes. Instead of cashews or unpeeled almonds, use peeled ones as a budget alternative to cashews and to mimic the bright curry color effect of a cashew-based curry paste.
