    A French seasoning consisting of a selection of herbs to accentuate your chicken beautifully.

    I created this blend of herbs with my French food heritage in mind. We love to use herbs to season our chicken dishes, as in my mum's French Roast Chicken Recipe.

    Ingredient Notes

    • Sage — Shouldn't be coarse, or else grind it a bit so that it incorporates better with the other herbs, or purchase ground sage.
    • Rosemary Dried and Ground — Needs to be ground so to blend into the mix. I recommend purchasing packed ground dried rosemary instead of doing it yourself, as it's tedious. If you have time and patience, dry your rosemary, toast the needles briefly in a pan, let them cool and grind them fine in a coffee grinder or small jar blender.
    • Thyme Dried — Thyme will make this seasoning blend French. You can use Lemon Thyme too (that's a thyme variety with a lemon flavor).
    • Marjoram Dried — Related to oregano, but it's not the same thing. Marjoram is super popular in Europe.
    • Savory (aka summer savory)— The herb is known as savory in English (sarriette in French) and it's commonly used in French cooking. This herb is an integral part of this seasoning blend. You can use dried leaves or ground savory.
    • Garlic Powder — Regular garlic power or toasted garlic powder, the choice is all yours.
    • Salt & Black Pepper
    • Tarragon (optional) — If you have it, add it, otherwise skip it because Tarragon is hard to come by. You can buy dried leaves. Tarragon adds a light licorice, unique flavor to the French Chicken seasoning, and a pinch goes a long way.

    Process Overview

    Step 1

    Place the dried measured herbs into a small bowl or on a plate

    Mix the herbs together with a spoon until they are well incorporated.

    Ingredients

    • ¼ Teaspoon Sage Dried
    • ½ Teaspoon Rosemary Dried ground
    • 1 Tablespoon Thyme Dried or Lemon Thyme
    • 1 Tablespoon Marjoram Dried
    • 1 Tablespoon Savory Herb Dried summer savory
    • 1 Tablespoon Garlic Powder
    • ¼ Teaspoon Black Pepper Ground
    • ¼ Teaspoon Salt
    • pinch Tarragon Dried optional

    Instructions

    • Measure all the seasoning ingredients and place them into a bowl or a plate.
      ¼ Teaspoon Sage Dried, ½ Teaspoon Rosemary Dried, 1 Tablespoon Thyme Dried, 1 Tablespoon Marjoram Dried, 1 Tablespoon Savory Herb Dried, 1 Tablespoon Garlic Powder, ¼ Teaspoon Black Pepper Ground, ¼ Teaspoon Salt, pinch Tarragon Dried
    • Combine with a spoon so that they are all well incorporated.
    • Store in a spice jar to use in the future or use straight away.

    Serving

    Sprinkle the French Chicken Herb Seasoning over your chicken cuts or into chicken meal sauces.

    Use it as a rub on your whole chicken, thighs, drumsticks or chicken breasts and with some olive oil and roast, grill or pan sear the meat until cooked.

    It's a super versatile seasoning blend, and you can get creative with its use.

    Storing

    The seasoning is stable for a few months when stored in a jar. Make sure the herbs are kept dry and airtight by putting them in glass jars with good seals.

    Over time, herbs, and ground garlic may lose their effectiveness. Blends of spices and herbs don't really go bad, but mold can grow in a jar if it's left out in the heat and humidity.

    Instead of putting the herb blend in the back of your pantry cabinet, I suggest placing it on a shelf where you can see it and out of direct sunlight.
