Pan-fried eggs prepared with green onions in just one skillet. You will take about 10 minutes to make this dish.
I love pan-fried eggs because they are simple to prepare and save me time on busy days. Eggs are comfort food in my book!
A while back, I came across an ASMR Tokyo street food channel, and they prepared green onion with eggs in a skillet.
I thought it was a refreshing pan-fried egg weeknight meal idea for a change, so I came up with my version.

Ingredients
- Green Onions — fresh. If you can't get green onions, you can use scallions too. And not, those two ingredients are not the same thing.
- Butter or Oil — I prefer using salted butter but you might like it with oil, such as canola oil, peanut oil, sunflower oil, or sesame oil.
- Eggs — You can try using quail eggs too, if you want to change up things.
- Salt and Black Pepper
Did you know? Green onions and spring onions are the same thing.
How to make it?
Step 1
Rinse your green onions, trim off the bad parts and the ends.
Slice onion bulbs and cut the stalks into 1 inch long pieces.
Step 2
Heat up a pan with the butter or oil and stir in sliced bulbs and cut stalks.
Pan-fry the green onion until halfway cooked through. Season with salt and black pepper.
Step 3
Push the onion to the edge so that you have space to break the eggs into the center.
Break the eggs in and cook eggs the way you like them. Sprinkle with a pinch of salt and pepper and serve up.

10 Min Pan-Fried Eggs with Green Onions
Ingredients
- 6-10 Green Onions aka Spring Onions
- 1-2 Tablespoon Oil or Butter
- ⅛ Teaspoon Salt
- ⅛ Teaspoon Black Pepper
- 2 Eggs
Instructions
- Rinse green onions, make sure to remove dirt trapped between the stalk junctions. Trim off the bad parts.6-10 Green Onions
- Trim off the ends, separate bulbs from the green stalks. Slice the bulbs and cut the green stalks into about 1 inch (~2 cm) long pieces.
- Heat up your skillet with the oil or butter. Wait until it's a bit hot and add the sliced green onion bulbs and cut stalks to the pan.1-2 Tablespoon Oil
- Fry onions over a medium to high heat setting and occasionally stir-cook.
- Season with salt and black pepper.⅛ Teaspoon Salt, ⅛ Teaspoon Black Pepper
- Once the onions are half way cooked through, push them aside in the pan so that you have space in the center to break in the eggs. Reduce heat.
- Break in the eggs and keep over medium heat afterward so that the eggs get to cook through while surrounded by the green onions in the pan.2 Eggs
- Fry eggs to your liking. When done, season eggs with a pinch of salt and black pepper as needed.
- Serve up hot.

Serving Ideas
The reason I recommend these eggs with green onions is because it's a different approach from the usual pan-fried eggs.
Green onions add a light onion flavor which complements the eggs. I think it's a great springtime pick me up!
I eat fried eggs as a dinner meal all the time, especially served with a suitable side dish. This recipe works great with the following side dishes:
- Polenta — Eggs and polenta are best friends. If you can't get polenta, use grits.
- Mash potato — You can't go wrong with mash potato and eggs for dinner. You can add some shredded cheese to that too.
- Bread — Yep, simple plain bread buns or whole wheat bread work great with this dish. We make Paul's baguette all the time.
