Cauliflower is such a versatile vegetable and I have not met many people who don't like cauliflower.
You can serve up cauliflower florets in many different ways and in fact, you can choose to cook cauliflower in different ways.
You can boil, roast, steam or bake cauliflower in little florets or as a whole.
Or you can also mash cauliflower into a puree or to add it to something else.
For example, the cauliflower pizza base has been the latest fad.
What I noticed with cauliflower is that it's one of those ingredients which takes in spices and herbs well.
So the cauliflower florets are packed with flavors equally, making great spiced Indian cauliflower recipes!
So it's not a surprise that cauliflower has turned into a very popular vegetable in India over the last decades.
This is a country where most people have vegetarian tendencies and a high spice tolerance.
In fact, China and India are the biggest producers of Cauliflower.
Mostly they produce one single variation of cauliflower.
Yet, there are different cauliflower varieties, besides the common white variation, such as the green, purple, orange and Romanesco varieties.
All are either Heirloom or Hybrid varieties.
That's where you can try to experiment with various cauliflower varieties with the collection of +15 Indian cauliflower recipes further below.
Just make sure to use only what's in season!
Cauliflower in Season
How do you know what is in season?
I watch my local market and if you have ever grown vegetables before, then you have a vague feeling for what is in season.
If I notice a batch of super fresh looking cauliflowers newly arrived at the market, I will approximately know that these might be in season right now.
It depends if you have seen cauliflowers of that caliber in the market in the previous weeks.
However, with cauliflower, it's not always easily recognizable if it's in season because generally speaking, cauliflower can be available all year round.
Cold Climate: Cauliflower is planted in spring and harvested in summer/autumn
Hot Climate: Cauliflower is planted in autumn and harvested in winter.
When you buy cauliflower, check the freshness of the vegetable.
That way you will know if you should buy it or not.
The cauliflower florets should be bouncy, bright white without any dark spots and the greens still juicy looking as if the cauliflower was just cut and harvested.
Here a great book, talking about seasonal vegetables:
