Cashew fruits are the fruits of the famed cashew nuts that you get in stores. The seed pod grows and hangs at the bottom of the fruit.
The “nut” is extracted from the seed pod in a separate process. Traditionally, cashew nuts are roasted over the fire to expose the nuts.
This process is still common practice in places where cashews are grown in orchards for the nut production or the distilled spirit production of the fruits (e.g., in Goa, India, fenni drink).
But the fruits are super tender, and therefore they can't be transported to be resold in western supermarkets.
You will only ever encounter cashew fruits in a tropical area (Florida, Hawaii, Brazil, South East Asia), and the fruits are in season in the Northern Tropical Hemisphere from March to mid-June and the Southern Hemisphere from September to December.
The fruit tastes unique, and I don't think I can compare it to some other fruits. It's not everybody's cup of tea. Yet, the best way to use up a bunch because they have a limited shelf life, is to turn the fruits into a tasty cashew fruit juice.
Ingredient Notes
- Cashew Fruits — The fresh fruits of the cashew seeds/nuts. They come in yellow, orange or red orange. Make sure they are not damaged.
- Salt & Sugar — optional, I opt for salt instead of sugar.
- Water
- Ice Cubes, optional
Process Overview
Step 1
Remove the seed pod from the fruit, cut off ½ inch (1 centimeter) of the top of the fruit and discard because this part is astringent.
Cut the fruit in half and remove the brown area where the seed was attached.
Step 2
Place fruits into a blender jar with the optional salt and sugar. Pour water over that.
Blend to a smooth juice.
Step 3
Place a fine mesh-sieve over a bowl and pour the juice through the sieve so that it gets strained.
Pour the collected juice into a serving glass with the ice and enjoy cooled.

How to make Cashew Fruit Juice
Ingredients

- Sugar to taste, optional (I don't add sugar)
- 1½ Cup Water
- Ice Cubes optional
Instructions
- Remove the seed pod from the fruits and keep aside (you can fire roast cashew seed pods). Rinse your cashew fruits carefully, they are super delicate.10 Cashew Fruits
- Cut off about ½ inch (1 centimeter) of the top of your cashew fruit (the opposite side of where the seed pod was attached), as this part of the fruit is astringent. Cut the cashew apple in two and cut out the brown fruit part where the seed pod was attached. Repeat the process with all fruits.
- Place the fruits into a blender jar with the salt (optional), sugar (optional), and water. Blend to a smooth juice.10 Cashew Fruits, pinch Salt, Sugar, 1½ Cup Water
- Place a large fine-mesh strainer over a bowl and pour a batch of the juice into the strainer to filter the juice, and to collect the pure juice in the bowl. Help out with a spoon or silicone spatula so that the juice falls through the sieve and doesn't get clogged with the fibers in the strainer.
- Pour the strained juice into a serving glass and add ice if you want your fruit juice cooled.Ice Cubes

Serving & Storing
The juice tastes best cooled on a hot summer day with some ice cubes or refrigerated.
You can keep the cashew fruit juice in the fridge for up to a day, but not any longer, it doesn't keep that well and is best enjoyed freshly prepared.
