    Preparing stamped cookies is so easy and fun at the same time!

    I used the cookie stamps with the Albertle cookies from South Germany, Bavaria.

    The Albertle are Christmas cookies which are defined by spices and a design on the cookies surface. 

    I tend to use the same recipe all year round too with different cookies stamps.

    Albertle cookies are a common sight in most homes in Bavaria.

    In Austria they can be seen in certain places, however they are not part of the traditional cookie making process during the Advent time.

    These delicious stamped cookies are quick, easy and fun to prepare, especially with kids.

    That's why the popularity is rising constantly for the humble Albertle cookie.

    The origin of the name "Albertle" is kind of an open question mark.

    I checked around online and asked some people from around Augsburg city, nobody had a clue how that cookie was given the name Albertle

    Hope remains!

    The cookies itself is made with some common ingredients including all purpose flour, corn flour, egg, sugar and baking powder.

    I like to add vanilla bean seeds, some cardamom and cinnamon powder to give the stamped cookies the extra edge.

    Long a trend in the US & Canada, stamped cookies have caught up in Europe, Asia and the rest of the world, thanks to popular shops and discounters selling those cookie stamp sets.

    Preparing stamped cookies can be so much fun, even for grown ups!

    Ingredients

    • 1 cup Butter you can use Margarine too to make this recipe Vegan
    • 1 large Egg
    • pinch Salt
    • 1 cup Sugar
    • Β½ Teaspoon Baking powder
    • 1 Teaspoon Vanilla Bean Paste *see Notes
    • 1 Teaspoon Green Cardamom Ground optional
    • 1 Teaspoon Cinnamon Ground optional
    • 3 cups All-purpose Flour
    • ΒΎ cup Corn Starch
    US - Metric

    Instructions

    • In a mixing bowl beat the butter (or margarine), egg, salt and sugar fluffy. Then add in the remaining ingredients baking powder, vanilla bean black seed paste (or Vanilla Essence), cardamom powder, cinnamon powder, all purpose flour and corn starch, Mix everything well and turn into a smooth dough. Let the dough rest for at least 30 minutes in the fridge, the dough needs to be cold so it will be easier to roll out and cut out the cookies.

    • Before rolling out the dough, preheat the oven to 180 Celsius/350 Fahrenheit.
    • Add enough flour to your working space so nothing sticks and roll out the dough to about a 3-4 mm/0.15 inch thickness. Then use your cookie cutter/stamp to cut and stamp all your cookies. Repeat rolling out and cookie cutting process until you used up all the dough.

    • Prepare your baking tray by placing baking paper/parchment on it. Then place the dusted cut out cookies on the paper. Make sure to keep at least 2 cm or about an inch space between each cookie. Bake for about 10 minutes at 180 Celsius/350 Fahrenheit almost golden brown. Make sure the cookies don't burn on or under cook, in case adjust the temperature of your oven by +-1-2 minutes.
    • Prepare a cookie box with some parchment and store the cookies in there.

    Notes

    1. Use Vanilla Bean Paste or scratch out vanilla bean paste form a vanilla bean or substitute with vanilla extract.

      Since short bread cookie dough is difficult to work with, is there another recipe that makes a dough for stamping?

        Currently, I only have the cinnamon star cookie dough which you can use instead of this shortbread cookie dough but the dough is darker shaded because it uses almond flour. I will be posting a sugar cookie dough in about 4 weeks which will be more easy to work with. You can subscribe to the newsletter so that you get the info when it has been published.

      I have never had such difficulty with dough before It was very dry & crumbled while rolling out. I managed to make a few pans & eventually threw out the rest. Very frustrating. I'll be looking for a new recipe.

        Hi Beth, thanks for your feedback. I'm sorry to read that you struggled with the dough.
        Shortcrust cookie doughs, such as this one, can be a bit daunting and it can take 2 attempts to get it right.
        I hope you won't feel discouraged and don't entirely give up on shortcrust cookie doughs.

      I didn't include the spices beyond vanilla, as I made these for a class of 5 year olds, but the recipe was absolutely perfect for making stamped cookies! They rolled out well, stamped and cut like a dream and baked to perfection!

        I know that some etsy shops can make custom made stamps, which is really cool if you need something special printed on the cookies.
