Rinse green onions, make sure to remove dirt trapped between the stalk junctions. Trim off the bad parts.
6-10 Green Onions
Trim off the ends, separate bulbs from the green stalks. Slice the bulbs and cut the green stalks into about 1 inch (~2 cm) long pieces.
Heat up your skillet with the oil or butter. Wait until it's a bit hot and add the sliced green onion bulbs and cut stalks to the pan.
1-2 Tablespoon Oil
Fry onions over a medium to high heat setting and occasionally stir-cook.
Season with salt and black pepper.
⅛ Teaspoon Salt, ⅛ Teaspoon Black Pepper
Once the onions are half way cooked through, push them aside in the pan so that you have space in the center to break in the eggs. Reduce heat.
Break in the eggs and keep over medium heat afterward so that the eggs get to cook through while surrounded by the green onions in the pan.
2 Eggs
Fry eggs to your liking. When done, season eggs with a pinch of salt and black pepper as needed.
Serve up hot.

Green onions and spring onions are the same thing. Scallions, on the other hand, are different. BUT you can substitute green onions with scallions to make this recipe.
