What is it?

Lox is brined raw salmon fish fillet. It's not the same as smoked salmon, as this one is smoked. Lox is not smoked.

Lox is the Yiddish name for Salmon. It is derived from the German word for salmon "Lachs".

Some say the only true lox is that made from the belly of the fish (which is fattier and richer), cured for three months.
