For the Salad

For the Dressing:

Instructions
Cook couscous as per package instructions with the water until cooked through.
Let the couscous sit to soak up excess water and fluff up with a fork.
Cut your tomato and cucumber into small dice.
Add the tomato and cucumber to the couscous and mix.
For the dressing mix all ingredients together in a small mixing bowl
Pour dressing over couscous salad and garnish with freshly chopped cilantro.
