Crispy light and fluffy waffle recipe made from scratch with basic pantry ingredients. Enhance the dough with vanilla essence or orange flour water or skip the sugar to make this waffle recipe a savory meal! So that the waffles turn fluffy add baking powder, and follow the technique to separate egg yolk and white to beat the egg whites to a snow.
Keep two bowls ready. Separate your egg, with the egg yolk in one bowl and the egg white in the other. Keep the egg yolk aside. (if a little egg yolk gets into the egg white you will have a hard time beating your egg white stiff, take out any egg yolk form the egg white if that happen).
Beat the egg white into a stiff snow. Test if it's stiff enough by turning the bowl upside down if the snow doesn't fall out you are good to proceed. Tip: It helps to beat egg white stiff in a cold bowl.
In the Egg yolk bowl add all the other ingredients: flour, sugar, salt, baking powder, butter, milk and flavoring if you want. Mix the whole content well into a smooth dough.
Then get the previously beaten stiff egg white snow and add it to the other bowl with the mixed ingredients. Carefully fold in your Egg white snow, do not mix in because this will take down the fluffiness. By folding in you make sure to retain at least 50% of the fluff in the egg whites. Create a smooth fluffy dough that way.
Heat up your waffle maker and wait for it to be super hot, then pour one ladle into the waffle maker and spread with a spatula. Close the waffle maker and cook till done, golden crispy.

I use powdered sugar because it mixes in easily into the dough.
You can use salted butter too. In that case, don't add more salt. Don't switch for oil, ghee or margarine, it won't taste the same.
The egg white of pasteurized eggs tend to be heavier and don't fluff up that well. Try to use regular eggs.
You may skip the sugar in the recipe to prepare savory Waffles.
If you are using something else then a non-stick waffle maker, then butter or oil your pan first before pouring in the dough!
You can create ombre style waffles by just filling one square in your waffle maker, the center in some waffle makers tends to cook quicker.
The serving size and amount of waffles depend on your griddle's largeness and if it's a deep one. Note that thinner waffles appear more airy and lighter.
