Sweet Potato noodles with poppy seeds

for the Potato dough:
  • 800 grams Sweet Potatoes
  • 200 grams Wheat flour
  • 50 grams melted Butter
  • 1 Egg
  • dash salt
for the frying:
  • ~50 grams Butter
  • 2½ Tablespoon poppy Seeds
  • powdered Sugar to garnish
  1. Start by peeling the potatoes and boiling them till they are soft. Add the boiled potatoes to a mixing bowl and smash them to a neat mash.
  2. Make a well into the potatoes and add in all the ingredients to make the potato dough.

  4. With your hands mix all the ingredients and work the dough shortly out.

  6. Roll the dough into a big fat sausage cut pieces and roll those again out but into noddles.

  8. Heat up a frying pan and add some butter with approx. 1 Tsp of Poppy seeds. Add the noodles and fry them on all sides well, till slightly brown. You will have to do that in batches till you finish all the dough.

For an extra eye efffect add dark poppy seeds instead of the light ones. I couldnt get dark ones and so had to use the light poppy seeds..
