Some few dishes out there in the world have the capability of enchanting and taking you to the core of a cultures heart and soul. You know how they say that music is a language in itself, a language which all in the world speak and understand? The same can be applied to the flavoures of food, the tickling of our taste buds, the zest in our life. It is something we all have in common because we all have to eat on this planet to live on, but our wants and choices of aromas differe enourmously. Non of us grows up and lives at the same place at the same time, our preferences are bound to be different towards food. All the individual cultures devolped over time, while carefully selecting the best of the best, but evolution is as continues as a perpetual motion. Our ancestors were the ones to revolutionise cookery, to change and invent exceptional, unforgettable bites. We will be the ones after that to have influenced and enriched the world with our discoveries and beautyfull creations.
But some things out there shouldnt be changed, because they are perfect as they are. No need of adding or removing even the tiniest of essence and ingredient, the master work would be uncomplete and mutated, like a fallen angel….
All this is visible in Galinha Cafreal, a rich, traditional, brilliant Goan Portugues Chicken dish. I have never ever thought of even trying to change the tiniest bit in this recipe, it is perfect as it is (You know how much otherwise I pick around). Words alone can’t describe it, only a trial, a bite will make you understand my words, feelings and love for this dish.
