Chicken fried rice and the trip to Gokarna

In Goa, chicken fried rice is classified as a Chinese Fast food dish. Now fast food doesn’t need always to be “bad”, in this case it is even a healthy complete dish, if you prepare it in a healthy way. My husband loves it and can’t get ever enough of chicken fried rice.
I actually got inspired to make fried rice that day, after coming back from our little trip to Gokarna. We had gone to drop some friends there and took the opportunity to make some breath taking snaps.

The distance between Goa and Gokarna is around 150 km which is fairly nothing, but the drive on the highway by car takes 10 houres to go and to come back. Gokarna is situated in Karnataka, a neighbouring state of Goa. The drive was very hot and humid and loooong but once you reach there you get excited. The view of the hill, the beach belt is well worth the anguished travel.

Gokarna is one of the last untouched places in the world, with empty beaches, some few bag pack travelers, a little hidden Paradise. The local people still live the simple way and are most welcoming. It is a huge contrast compared to Goa, but then any place in the world is a contrast to Goa.
The beautiful part of Gokarna is that there are literally no Domestic Tourists. Now don’t take me wrong with that, but it’s just so difficult to feel comfortable and in peace on a beach in India, when you get harassed continuously by some horny middle aged married men. Many Indians, not all though, have never seen a beach or any foreign people before and act crazy when they do.
Gokarnas most famous beach is Ohm Beach, named as such because of it’s form, resembling a ॐ – Ohm. Hidden behind hills and trees, you could believe to be in heaven.






We sighted salt fields and plantations.




We met on our way back, 3 sympathetic women with their little fruit market, next to the highway.

Chicken Fried Rice - Serves 2

1 cup Basmati rice, pre boiled and kept several hours in the fridge


200 gms boneless Chicken, cut into small pieces

1 Tsp Turmeric Powder


1/2 Tsp Chili Powder


1/2 Tsp Vinegar

1 Tsp Ginger Garlic Paste


Salt




1 Egg



1 medium Onion, chopped


5 cloves Garlic, chopped


1 medium Tomato, small cubed


1/4 of medium green Capsicum, chopped or cut in small stripes


1 small carrot, cut in small pcs

1 small green chili, chopped


Olive Oil


1 1/2 Tbs Soy Sauce


1 Tsp Worcestershire Sauce


Coriander or Parsley – to garnish



This recipe works best if the plain cooked rice is kept for some hours before in the fridge to cool. Otherwise you  will end up with a mash of rice, which isn’t appetizing. 


We want to give the dish extra flavour and to do that you have to marinate the chicken. Add to the chicken, Turmeric Powder, Chili Powder, Salt, Vinegar, Ginger Garlic paste. Turmeric kills bacteria as vinegar does, plus it gives a nice taste to the whole dish. Chili powder will give you some zing and the ginger garlic paste will keep your meet soft and flavourful. Keep it marinated for minimum 10 mins (if you are in a rush) but keep in mind, the longer the better!


When you are ready to prepare your own Chicken fried rice then start by heating little water in a pot and add the marinated chicken to cook for 10 mins. By the time it is cooked the water will be gone.



While the chicken is cooking, fry 1 Egg crispy in little olive oil and keep aside. You will need it at the end, shredded, to add to your fried rice.





As I had indicated further on top, wash, clean, cut and chop all Vegetables finely and fry the Onion and Garlic in little Olive Oil glossy, on medium heat.





Add the other Vegetables, Tomato, Capsicum, Carrot and Chili one by one, frying on low heat till soft.




When you feel the vegetables had enough time to cook let’s say after 5-10 mins, add the boiled chicken and stir fry.




Add the rice,….




…. and to flavour it all add Soy sauce, Worcestershire sauce, Salt, Pepper and the shredded fried Egg and mix it all stir frying for 3 till it is well cooked but not too dry.



To serve place the Chicken fried rice in a plate and garnish with freshly chopped Coriander leaves or Parsley if prefered. You can sprinkle some Lemon juice on top, I enjoy it always like that the best!

Hi Helena! Thank you for sharing the pictures from your trip. It's really nice that I could get to see a part of world that I probably won't be able to visit. It seems like you had a nice vacation. :-)

The chicken fried rice looks yummy! Very interesting to add vinegar in the marinade and Worcestershire Sauce. It gives extra complex flavor. I should give it a try next time. Looks yum!!!
